Budapest at night Budapest is an easy flowing name while in reality; it is a merger of 2 cities into one beautiful dreamland. Danube River flowing across divides this big city into 2, and exactly the city has 2 different ways a city can exist. While pest is metropolitan city busting with busy wide streets filled with people all around, on the other had Buda being hilly region has more of narrow street old style buildings stone paved roads less hustle of course tourists do take up the large crowd, few parts are maintained as personal space not allowed for public viewing. This city can be enjoyed the most afternoon to evening; its picturesque appearance when the lights are on is a sight to behold. Deconstructed vegan apple pie

You don't get to eat a pie every day, but if this kind of pie then I don't mind eating it daily. Am very particular about what I eat, mainly its oatmeal cooked to the pudding consistency with slight variation and some fruits. This apple pie is basically my everyday breakfast made in a different way, baked to perfection.  On some days you eat apples and other day oats but on a very rare day, you include both of them. This was one such day. Eating this pie with a scoop of vanilla ice cream will be a match made in heaven. In a large bowl mash a big ripe banana, add few spoonfuls of dairy-free milk and add 2 cups of old fashioned rolled oats with few tablespoons of mixed chopped nuts and seeds. Add a teaspoon of cinnamon powder mix well until fully incorporated. Pour it into a baking tin, top it with sliced apple and sprinkle some coconut sugar for that extra crunch.  Bake this at 180-degree Celsius for 25-30mins, then enjoy the...

Birthday cake dilema, sorted.

It is the little one`s birthday and so the baking dish has to be out of the rack. While I craved for cheesecake, we talked over making an amazing peanut butter and chocolate layered cheesecake. The excitement of satisfying my sweet tooth was overwhelming and I was fully prepared as the plan was made that I start preparing for it 3 days prior so that I don't have to worry on last. But all the imaginary satisfaction that I had created in dreams was shattered when little one announced: " cheesecake, cheeeeee no I want only proper chocolate cake". Probably she had a vision of one of those cakes on the isles on cake shop where they stack up varied coloured and shaped cakes. But the mom in me did not agree to give up into those sugary indulgent cakes but was in a dilemma now. It was her day so better not disappoint her, finally, I gave in and agreed to make a double layered chocolate cake with chocolate frosting. Hearing this sad face changed ...
